Nasi Kuning - Yellow Rice

Serves 4-6
Preparation time: 5 minutes (after rice cooked)

Ingredients

A bowl of cooked rice from 2 cups of raw rice, 3 cups of water - cooked in either rice cooker pot
½ thumb size of fresh turmeric,
2 cloves garlic,
¼ tsp of dried 'kencur' (aka 'lesser galangal'),
Finely chopped kaffir lime leaf,
2 tbs vegetable (or coconut) oil,
Salt pepper to taste

Cooking Method:

  1. Mix spice in a mortal pestle and fry using 2 tbs oil.
  2. Mix rice and cooked spice in a large bowl - add more salt if needed.
