Banana Pancakes

Triple Banana Pancakes - a Desak original recipe with tips from Chef Nyoman

Serves: 2 people
Preparation Time: 20 minutes

Ingredients

1 cup self-raising flour
1 egg, lightly beaten
ΒΌ tsp salt
A pinch of cinnamon powder
2 tsp maple syrup
1 cup milk or watery coconut cream
2 tbs butter
4 ripe bananas

To Serve:

Lemon
Maple syrup or honey
Vanilla ice cream
Cinnamon powder (sprinkle over)

Cooking Method:

  1. Mix in a large bowl 2 mashed banana, flour, egg, salt, maple syrup, and milk - can use stick blender or simply use a fork.
  2. Heat a crepe pan or shallow non-stick pan and add 1 tablespoon of butter
  3. Slice one banana round and thin, place in the pan
  4. Allow to cook and caramelize about 2 minutes
  5. Pour over a half of your batter, tilting the pan to get good coverage over your banana slices
  6. Cook the pancake over medium to low heat (depending on your type of stove) until holes appear and the top surface is dryish
  7. Flip, or turn over with a spatula, and cook a few minutes more, check to make sure the bottom is not burning
  8. Repeat one more time with remaining batter, butter, and bananas

Serve with a wedge of lemon, sprinkled with cinnamon powder, fresh slice bananas, vanilla ice cream, and maple syrup
