Vegan Pepes (with Oyster Mushroom)

Preparation Time: 45 minutes

Ingredients

150g oyster mushroom
2 fresh kaffir lime
2 Tbs Bali In A Jar curry paste
100g shredded or desiccated coconut
50ml coconut cream
1 Tbs fried shallots
1 large chilli or capsicum thinly sliced
1 Tbs soy sauce
Salt pepper to taste
200 g banana leaves Divided into A5 paper sizes around 12 pieces.
Toothpicks

Cooking Method:

  1. Shred oyster mushroom into thin pieces using your hand or slice with knife.
  2. Chop kaffir lime leaves or slice very thin
  3. Mix all ingredients (except for banana leaf/toothpicks) in a large bowl
  4. Put 2 pieces banana leaf on top of each other, add 2-3 tablespoon of mixture in the middle, roll the banana leaf and secure each end using toothpicks.
  5. Cook under a grill or on skillet for 30 minutes (15 minutes each side).

PS: for the same recipe - you can steam for 30 minutes instead of grilling.
