Thai Som Tam Salad - Green Papaya Salad

Serve: 4 people
Preparation Time: 20 minutes

Ingredients:
2 cloves of garlic
1-3 birds eye chillies
1 tbs fish sauce
50g palm sugar
ΒΌ tsp tamarind paste
50 g dried shrimps
1 large tomato
A few Thai eggplants (small round eggplant)
100g of shredded green papaya
50g of shredded carrots
50g of shredded green mango/green apple
100g of roasted peanuts
Lettuce leaf

You can use lime juice to replace tamarind paste and green mango is optional. Chilli amount is depending on your tolerance to heat.

Preparation Method:

  1. In a mortar & pestle, pound the garlic, chilli, palm sugar, pound roughly.
    Add fish sauce, tamarind paste, dried shrimps and tomatoes (bruise tomatoes first) to the mortar & pestle.
  2. Add green papaya, carrots, mango/apple, roasted peanut, and mix together.
  3. Arrange lettuce, on a plate and pour the mixture from the mortar & pestle on top.
