Pisang Goreng - Banana Fritter
Serves: 4-6 people
Preparation Time: 30 minutes
Ingredients
1 cup self-raising flour
1 cup chilled water
¼ tsp salt
6 well ripe ladyfinger bananas
400ml vegetable oil
50g grated coconuts (optional)
For caramelised palm sugar syrup:
100g dark palm sugar (or mix of 50g palm sugar + 50g brown sugar)
100ml of water
½ tsp vanilla essence
Cooking Method:
- In a large bowl make a thick batter by mixing the flour, chilled water and salt
- Peel bananas, split each banana into two long thinner banana slices, or cut into two again for smaller size
- Heat oil in a small pan for shallow frying, once oil is hot, turn stove to medium
- Dip each banana into the mixture
5. Fry in hot oil until each side brown, only turn over once. - Leave cooked banana fritters to cool down on paper towel.
- Repeat the frying process until all done.
For the caramelised sauce:
- In a little pot add water, palm sugar and vanilla essence.
- Upon bringing to boil, turn the stove down to low until all palm sugar is melted after which turn the stove off.
- If you like your sugar syrup to be thicker then before turning your stove off add in ½ tsp of arrow root or tapioca flour (mixed with with cold water in a cup) and pour it into the palm sugar syrup. Mix thoroughly for 1 minute and turn the stove off.
Serve banana fritters with grated coconut and drizzle with caramelized palm sugar syrup, add vanilla ice cream for each serving if required.
