Kolak Pisang - Caramalised Banana Dessert

Ingredients
8 lady finger bananas
100g white sugar
100g palm sugar
50 coconut cream (mix with 200 ml water)
1 pandan leaf (optional)
100ml water
Salt to taste
Vanilla essence
Half finger size cinnamon stick
50g grated coconut
Cooking Method:
- Peel bananas and cut into cubes around 6 pieces for each banana
- In a little pot, put sugars, 25ml coconut cream, water, pandanus leaf, salt, vanilla essence, cinnamon stick - bring to boil
- Turn stove to medium, add bananas and keep it boiling for another 5 minutes and bananas change colour looking softer - mix it through by folding bananas over gently
- Put aside and serve warm in a small bowl, sprinkle with grated coconut and a dash of coconut cream or top with a scoop of ice cream
