Jukut Nangka / Balinese Jackfruit

Serves: 6 people
Preparation time: approx. 40 minutes

Ingredients

1.5 kg of fresh young jackfruit cut into small cubes (jackfruit in the can be used if fresh jackfruit not available)
1 jar of Bali In A Jar Curry Paste
4tbs of vegetable oil
Salt & pepper to taste

Cooking Method:

  1. Heat oil in a deep pot on high and add the Bali In A Jar Curry Paste. Stir until the sauce is fragrant.
  2. Add jackfruit into the pot and just enough water to cover the jackfruit. Bring to boil and keep cooking on high for 20 minutes.
  3. Turn stove to medium, add salt and pepper and continue cooking until the broth is reduced and the jackfruit is very soft.

Serve with steamed white rice. The dish can be warmed up the next day and in fact often taste better the next day with the sauce having had the chance to soak into the jackfruit, which will exhibit a darker colour from the same.
