Sate Pelecing Babi - Pork Satays With Tomato Chilli Sauce
You can use pork, chicken, or beef
Serves: 6 persons
Total time: 1 hour -- (not counting marinating time min 2 hours or overnight)
Ingredients:
1kg pork - middle neck
4 tbs kecap manis
50 sate skewers
Marinade ingredients:
6 cloves garlic
3 small slice ginger
4 candlenuts
2 tsp coriander seeds
50g coconut/palm sugar
1 tbs tamarind
½ tsp salt
¼ tsp white pepper
1 tsp chicken stock
½ tsp chilli powder
2 tbs vegetable oil
Sauce ingredients:
4 tsp Bali In A Jar Chilli Paste
4 small red tomatoes - chopped
½ kaffir lime fruit
Salt and pepper to taste
Method:
- Cut up the pork into thin small cubes
Use mortar and pestle, or food processor to blend the marinade ingredients coarsely - Mix pork and marinade, cover and leave it in the fridge for a minimum of 2 hours
- After marinating, skewer pork onto individual satay sticks
- Cook satay skewers on a coconut charcoal or regular BBQ, basting it regularly with a mix of vegetable oil and a dash of kecap manis
- On a fry pan, heat up 1 tbs vegetable oil. Add chopped tomatoes and stir until soft. Add Bali In A Jar Chilli Paste, salt & pepper to taste. Squeeze some fresh kaffir lime juice into the sauce
- Serve cooked satay skewers on a large tray, with the sauce and some kecap manis as sides.
