Kencur, also known as lesser galangal or dried cutcherry is an aromatic root herb that is used in Balinese cooking to add and enhance flavours. Typical dishes that use kencur include:
Lawar (vegetables with coconut, herbs and spices)
Dadar Jagung (fried corn fritters)
Ayam Betutu Gilimanuk (spiced chicken),
Sate Lilit – (satays of meat/grated coconut), and
Nasi Kuning (Yellow rice)
