JUKUT URAB/BALINESE VEGETABLES IN SPICE & GRATED COCONUT

Serves: 4 people

Preparation time: 20 minutes

Ingredients:

1 bunch of snake beans

1 small pack of fresh crunchy beansprouts

100g of fresh grated coconut

4 tbs of Bali In A Jar Veggie Curry Paste

A handful of chopped cooked meat/chicken/pork (optional for meatlovers only!)

1 tsp of chopped fresh chillies

1 piece of kaffir lime leaf – sliced as thin as possible

2 tsp of vegetable oil

Salt & pepper to taste

 

Cooking method:

  1. Cut up snakebeans into tiny pieces and then blanch in boiling water together with beansprouts for 1 minute
  2. Heat up oil in a wok on high. Fry chopped chillies, then add the Bali In A Jar Veggie Curry Paste together with salt & pepper. Stir through until fragrant and then put aside in a small bowl.
  3. Mix in a medium sized bowl  the blanched vegetables, chopped meat (if relevant), the chilli and spice from 2 above, the coconut and kaffir lime leaves.

Serve on plates with steamed white rice.
