BEBEK BETUTU/BALINESE AROMATIC DUCK

1 whole duck (approx. 2.2 kg)
1 jar of Bali In A Jar Rendang Paste
100g of fresh sugarcane stick (split into 4)
4tbs of vegetable oil
500g banana leaf or greasproof paper or foil for wrapping
- Dry duck with paper towel and rub thoroughly with the Bali In A Jar Rendang Paste and the vegetable oil. Make sure spices soak into the duck skin.
- Put left over spice and sugarcane sticks inside the duck and secure duck opening with bamboo stick.
- Wrap duck with several layers of banana leaf (or greaseproof paper/foil) then steam for 50 minutes.
- Remove duck from steamer and place in a moderately heated oven (180 degrees) for 30 minutes with wrapping still on.
Serve duck on a large plate – opening up the wrapping to display the duck. Duck should be soft when cutting.
